Fennel comes from the umbellion blossom family, which also includes celery, dill, carrot and parsley. Fennel seeds are the fruits of fennel, they have an intense and slightly sweet taste reminiscent of anise or licorice. The seeds are a popular spice for Indian or Chinese dishes.
Fennel seeds are versatile – whether as a spice or as a tea. For a cup of tea: place ½ teaspoon in a tea strainer. Place the infuser in a cup and pour boiling water over it. Approx. Leave to steep for 6 minutes – this is the only way to get a safe food! and then remove the strainer. Optionally stir in lemon juice and honey.
